Whether you are baking for the holidays or preparing your own homemade weddingfavours- this simple recipe for Cream Cheese Sugar Cookies is sure to be a hit. I tried it myself last night just to be sure. Great results!
1 cup softened butter
1 8oz package of cream cheese
1.5 cups white sugar
1 tsp vanilla
1/2 tsp almond extract
3.5 cups white flour
1 tsp baking powder
Preheat oven to 370.
Mix (by hand or stand mixer) butter and cream cheese until well combined.
Add sugar- mix until smooth
Add egg, vanilla and almond extract
In a medium bowl, combine flour and baking powder.
Add to cheese mixture and beat until well mixed.
Divide batter and cover.
Chill in refrigerator.
Roll dough and cut using cookie cutters.
Bake 12 minutes on ungreased cookie sheet.
At this point the dough is sort of goopy. If you form it into a ball and put it into the fridge it will firm up and become nice and elastic. It is very easy to roll out and cut into shapes.
The dough is nice and elasticy when when you roll it out. Dip cookie cutters in flour so that the cookies will come out and hold their shapes.
I didn’t actually use a recipe for my frosting but this is one that works well. I added a little Almond Extract to my frosting to match the flavouring of the cookie.
3 cup sifted confectioner’s sugar
1/4 cup milk
1/2 tsp vanilla
Dash of salt
Combine ingredients and mix well. Add food colouring if desired. Decorate with a pastry bag and embellish with silver balls candies or sprinkles. Let them dry and then store them in a sealed container with parchment paper between the layers.
Here is the finished product! I brought them into the office today and I have been very popular. They make a great wedding favour. Consider baking 3-4 per person and packaging them up as a special treat for all your guests.
